Now it's time to head outside and cook the cracklins. Believe me–you don't want to cook cracklins on your kitchen stove.

  1. It'll heat up your kitchen something awful.
  2. It makes a terrible mess.
  3. Your house will smell like cracklins for months.
  4. You might burn down your house.


Slice pork into small pieces about 1/4" thick and 1/2" wide. Sprinkle with Cajun seasoning. Fry over medium heat in a cast iron skillet until golden brown. Drain on paper towels and serve.
